It is a traditional, characteristic blue cheese, handmade and aged long enough for the development of the characteristic internal molds, flavor and texture.
It has no defects such as: hard, dry, very salty, bitter or sour.
CABRALES
MARIELLO
It is a seasoned blue cheese, European blue Cabrales style. It is handmade and matured long enough for the development of the characteristic internal molds, developed and intense flavor, and creamy and melting texture.
It is recommended to cut with a cheese knife (with a grooved blade to prevent the portion from sticking), with a wire cutter or directly use it for spreading.
GORGONZOLA
STRACCO
Its natural rind, with an intense and earthy flavor, with its characteristic mold, firm but creamy. Ideal with a sweet melon or caramelized pears.

TRADITIONAL RECIPE
For our exclusive cheeses we use ferments and ingredients of Italian and French origin, it is a long process of elaboration where patience is required to process the fresh milk supplied by local producers.
Different aspects of the cheese are evaluated in order to evaluate the flavor and characteristics after 35 days.
